Yams [Dioscorea alata]

Yams is a seasonal crop that is planted from June to August and it takes 10 to 12 months to harvest.  it contains Potassium, modest amount of Vitamin B1, Vitamin C and fair amount of Iron.  Yams are exported to New Zealand, Australia, Canada and other Pacific Islands and has traditional values to the indigeneous Fijian communities.

Agricultural Marketing Authority sources it supply from the two main islands in Fiji and from traditional growers in the maritime areas. It is a sources of income to the most rural farmers and its a good subtitute  in food dishes that uses potatoes.  To assist our rural farmers AMA has a policy to pick, weighed and pay at farm gate before it is transported to the Warehouse.  It is peeled, washed and stored in blast freezers of minus 21 degrees for 24 hours before it is packed for overseas market.
